Tawa Pulao

 Tawa Pulao is a most common and popular street food in India. Made with rice , vegetables and same tangy, sour and sweet spices Ingredients: • 1 cup Onion finely chopped • 1/4 cup Capsicum  • 1/4 cup Carrot diced • 1/4 cup French Beans • 1/2 cup Tomato diced • 1/2 tsp Cumin Seeds • 1/4 cup Green Peas  • 1 tsp Pav Bhaji Masala • 1 tsp Ginger Garlic Paste  • 1 tsp Red Chilli Powder • 2 tbsp Butter • 2 cups Boiled Rice  • Salt to taste Method:  • Heat up butter in a pan. • Add cumin seeds and let them splutter.  • Add finely chopped onion and fry it well for about 3-4 minutes.  • Add ginger-garlic paste and mix well.  • Add capsicum, carrot, french beans and fry it for about 4-5 minutes.  • Add tomato, green peas and cook everything well for about 3-4 minutes. • Mash the veggies a little.  • Add half of pav bhaji masala, red chili powder, salt and mix well. • Add rice, left over masala, red chili powder, salt and mix well.  • Add...

Shevai Kheer

  Shevai Kheer is a Indian sweet dish it will made on special occasions and festivals. Ingredients : • 1/2 cup fine Shevai  • 1 liter Milk (Full cream or full fat) • 1 tsp Ghee • 125 grams grated Khoya  • 1/2 cup Sugar • 1~2 drops Kevada essence • Few chopped Cashew nuts • Few chopped Almonds Method : • Heat up ghee in a pan.  • Add fine shevai and fry for few seconds.  • This is roasted shevai that I have bought from the market.  • Add milk and mix well . • Cook shevai well in milk for about 10 minutes. Keep on stirring at the intervals. • After about 5 minutes of cooking, when shevai is about to get cooked, add dry fruits and continue cooking for next 5-7 minutes. • After about 10 minutes of cooking shevai gets completely cooked.  • You can reduce milk further but it takes longer time.  • Add khoya and mix well.   Ingredients:   For Rice 1 kg Basmati Rice, washed and rinsed ½ inch Cinnamon 4 Cloves ¼ cup Ghee, melted 2 Green Cardamom pods Salt to taste For Marinade 1 kg chicken with bone, cleaned and washed ½ cup curd, beaten  4 medium onions, sliced 2 tbsp barista/fried onion 1 tbsp saffron water  2 sprigs of mint leaves  1 tsp coriander powder ½ tsp green chilli paste  1 tbsp degi chilli power  1 tbsp Ginger Garlic paste 3-4 green chillies, slit  Salt to taste Other Ingredients 1 tbsp ghee 2 tbsp saffron water 2 tsp saffron water  1 tbsp ghee 1 tbsp barista ½ tsp rose water ¼ cup water  ½ cup milk Drop of kewra water Raita Few mint leaves  Salt to taste For marinade  • In a mixing bowl, add chicken and marinate with all the ingredients. • Let the chicken marinade preferably overnight or for minimum 3 hours.
