Shevai Kheer


 Shevai Kheer is a Indian sweet dish it will made on special occasions and festivals.

Ingredients:

• 1/2 cup fine Shevai

 • 1 liter Milk (Full cream or full fat)

• 1 tsp Ghee

• 125 grams grated Khoya

 • 1/2 cup Sugar

• 1~2 drops Kevada essence

• Few chopped Cashew nuts

• Few chopped Almonds

Method

: • Heat up ghee in a pan.

 • Add fine shevai and fry for few seconds.

 • This is roasted shevai that I have bought from the market.

 • Add milk and mix well

. • Cook shevai well in milk for about 10 minutes. Keep on stirring at the intervals.

• After about 5 minutes of cooking, when shevai is about to get cooked, add dry fruits and continue cooking for next 5-7 minutes.

• After about 10 minutes of cooking shevai gets completely cooked.

 • You can reduce milk further but it takes longer time.

 • Add khoya and mix well. Khoya gives richness to this kheer.

• Add sugar and mix well.

• Cook everything together for next 5-10 minutes.

 • Add kevada essence and mix well. You can use rose essence too.

• If you use kevasa esscnce or rose essence then you don’t need to use cardamom powder.

 • Shevai kheer is all ready.

 • It goes well with poori.

 • You can serve this hot or cold too.

• It remains good in freeze for about 4-5 days.

 • From this proportion you can make kheer enough for 4-5 people.
